Ingredients

  • different salad leaves (about 100 gr)
  • 1 zucchini into thicker slices of 1cm
  • 5 radishes in halves
  • olive oil for baking
  • 50 gr broccoli (normal or the asparagus version)
  • 5 tomatoes in halves
  • 3 radishes in thin slices
  • 1 spring onion in rings
  • 1 celery stalk in slices
  • (homemade) hummus and/or gaucamole
  • 50 gr of feta

Dressing ingredients

  • 3 tbsp Walnut oil
  • Salt and pepper

This rainbow salad is not a real recipe, it is more a serving suggestion of beautiful vegetables combining a beautiful and colourful platter of tasty veggies. You can throw anything you want in this bowl, as long as you use lots of fresh ingredients. 
This is a great option for a single dinner meal or a lunch for 2.

Preparation

Preheat the oven to 220 degrees. Add the zucchini slices, half radishes and broccoli to a baking tray, drizzle with olive oil and roast for about 20 minutes. Leave to cool.
Now start preparing your rainbow bowl, start with the leaves, then add the roasted vegetables and the tomatoes, radish slices, spring onion rings and celery. Drizzle with olive oil.
Crumble the feta on top and add a big spoon of hummus and or guacamole.
