Chicory (also known as witlof) is a crunchy and slightly bitter member of the endive family that pairs extremely well with sweet fruits and creamy dressings as showcased in this tasty salad. Top with some cashews for a bit of extra crunch.  

Preparation

Remove the leaves from the chicory heads and slice into thin strips. Core and thinly slice the apple and squeeze over some lemon to prevent the apples from going brown. Finely chop the celery and apricots and slice the onion into rings. Combine salad ingredients in a serving bowl. Mix together dressing ingredients and drizzle over the salad. Finish by sprinkling over a few cashew nuts.
