This delicious cucumber salad is perfect as fresh-spicy accompaniment to oriental chicken and meat dishes with rice or noodles.
Wash cucumbers, cut into thin slices. Halve the chilli, remove seeds and chop finely. Halve the onion and cut into thin rings. In a bowl add the hot water, vinegar and then dissolve sugar in it. Next add chilli, onion, crushed bay leaf, parsley and cucumber and mix it well. Season with salt. Store it in the refrigerator as this salad is best served cool and will help bring out the flavours.

Tip: Do you like hotter? Leave the seeds in the chilli. You can also serve this with some fresh lettuce leaves.
