Ingredients

  • 3 fresh peaches, kernel removed, cut into wedges
  • 100 gr Salanova melange
  • 8 slices of prosciutto, torn into smaller pieces
  • 3 sprigs of fresh mint, leaves in strips
  • olive oil

Dressing ingredients

  • 4 tbsp yogurt
  • ½ tbsp olive oil
  • 1/2 red pepper, finely chopped
  • ½ tbsp honey

Have you ever grilled peaches before? Grilling brings out their natural juiciness and intensifies their deep summer sweetness. These sweet grilled peaches go very well with salty prosciutto and the crunchy melange of Salanova leaves and mint.

Preparation

  • Mix the dressing ingredients and put aside.
  • Meanwhile, heat a grill pan or barbecue. Brush the peach wedges with olive oil, then grill the peach on each side (about 1 minute).
  • Divide the lettuce over the plates and place the peach wedges, prosciutto and mint on top. 
  • Drizzle the salad with yoghurt dressing.
