Are you a mocktail fan yet? Mocktails are cocktails without alcohol. Mock means fake, although the name doesn't pay homage to the tasty cocktail variations you can make without alcohol. This fresh mocktail with cucumber and basil is a terrific example of this. Aromatic because of the basil and tarragon and fresh because of the lemon and cucumber. Because fresh tarragon is not available in every supermarket, we have opted for dried tarragon. This is often aromatic enough to add that real tarragon flavour. If you have access to fresh tarragon, add 4 leaves to the blender. You can also spice up the mocktail with a fresh basil garnish. To do this, you would need 4 extra leaves for your recipe. Create this mocktail with cucumber as fresh as possible, so the colours and flavours stay fresh and bubbly.

Preparation

  • Cut the cucumber into chunks.
  • Blend the cucumber with the lemon juice, basil, tarragon and honey until juiced.
  • Pour the cucumber juice into 4 glasses and top with sparkling mineral water.
