• A couple of handfuls (half a kg) of green beans (trimmed into 6cm lengths)

When it comes to cooking, I reckon simple is best, especially for blokes like me. Take for example what I call my Everyday Salad.

I buy a fresh pre-packed lettuce salad from my local greengrocer, add some balsamic vinegar, olive oil and salt and pepper. Then I eat it. Pretty simple huh? But it tastes great. For a bit of variety, or to spice it up if I'm entertaining I add some sliced onions, tomatoes or cucumbers, or whatever is growing in my small veggie patch.

Simple but so healthy and versatile. Another fantastic – yet easy – dish is my green bean salad. It's best using beans freshly picked off the vine and it takes about five minutes or so to get it on the table. Trust me this is magic!

Lightly par-boil or steam the beans. Place the beans, red onion and red capsicum in a bowl. Mix dressing and toss through salad.
