When it comes to cooking, I reckon simple is best. Especially for blokes like me. Take for example what I call my Everyday Salad. I buy a fresh pre-packed lettuce salad at the supermarket, add some balsamic vinegar, olive oil and salt and pepper. Then I eat it. Pretty simple huh? But it tastes great.

For a bit of variety, or to spice it up if I'm entertaining I add some sliced onions, tomatoes or cucumbers, or whatever is growing in my small veggie patch. Simple but so healthy and versatile.

Another fantastic – yet easy – dish is this green bean salad. It's best using beans freshly picked off the vine and it takes about five minutes or so to get it on the table. Trust me this is magic!

Preparation

Boil a pot of water, drop the beans into the pot and cook for two minutes (par-boil) until crisp-tender and vibrant green.

Place the beans, red onion and red capsicums in a bowl. 

Mix the dressing ingredients and then toss through the salad.
