• 200 grams of chickpeas
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 500 – 600 grams of mixed tomatoes of your choice
  • Fresh dill, oregano, and basil for garnish

Dressing ingredients

  • 3 tbsp extra virgin olive oil
  • 3 tbsp lemon juice
  • 1 tsp mustard
  • 1 tsp honey or agave syrup (vegan)

We are big fans of tomatoes: from the texture, the taste, the various types and colors, and all the delicious dishes you can make with them. In this recipe, we combine delicious tomatoes (pick your favorite mix!) with crispy roasted chickpeas from the oven. An ideal combination! Especially when you make a fresh dressing to go with it. Want to give your tomato salad a little extra? Consider adding nuts or a delicious ball of burrata. Anything is possible!

  • Preheat the oven to 200 degrees Celsius and line a baking sheet with parchment paper.
  • Rinse the chickpeas and pat them dry. Mix them on the baking sheet with the paprika powder, onion powder, garlic powder, and salt. Bake them in the preheated oven for 15 – 20 minutes until golden brown and cooked.
  • Meanwhile, cut the tomatoes into pieces. Spread them out on a dish.
  • Also make the dressing in the meantime: mix the olive oil with lemon juice, mustard, honey, and salt and pepper.
  • Pour half of the dressing over the tomatoes. Then mix in the chickpeas and garnish the salad with the fresh herbs as desired.
  • Serve the rest of the dressing on the side.
