Ingredients

  • 2 large courgettes
  • 2 eggs
  • 8-10 tbsp panko or breadcrumbs
  • 6 tbsp flour
  • 1 tsp paprika powder
  • 1/2 tsp salt
  • ½ teaspoon pepper
  • 75 g grated Parmesan cheese

Dressing ingredients

  • 1 onion
  • 2 cloves of garlic
  • 1/2 red pepper
  • 1 tsp paprika powder
  • 1 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1 can diced tomatoes

Guilt-free snacking? That's possible with these deliciously crispy zucchini fries with red sauce. This side dish, or light lunch, consists almost exclusively of vegetables! The zucchini becomes crispy, lightly salted fries and the sauce is made from diced tomato and spices. Not only is this a healthy snack, but it’s also budget friendly. Cheaper even than a visit to the snack bar. Nice, right?

Preparation

  • Chop the onion and finely slice or crush the garlic. Also finely chop the red pepper.
  • Heat some oil in a saucepan and fry the onion, garlic and pepper until the onion is soft. Then add the paprika, cumin and coriander powders and fry on low heat for a few minutes. Add the diced tomato, bring to the boil, stir well, and turn the heat down. Let it simmer for 10 minutes. Season with salt and pepper.
  • Pre-heat the oven to 200 degrees. 
  • In the meantime, cut the courgette into thick fries. Beat the eggs in a large bowl. In another bowl, mix the panko with the flour, paprika, salt, pepper, and grated cheese.
  • Dip each courgette fry in the eggs – make sure they are coated completely – and then in the panko mixture. Place the fries on an oven grid or on a baking tray lined with baking paper. Make sure you spread them out well and that they do not touch each other. 
  • Bake the fries, possibly in batches, for 10 minutes in the preheated oven. Turn them over halfway (not necessary if you bake them on a grid). 
  • Serve the zucchini fries immediately with the red sauce.
