• 600 g potatoes, peeled and diced

A delicious vegetable tortilla with garlic and zucchini. Combine this awesome tortilla with grilled tomatoes and a cucumber salad with tomato dressing.

  • Add the diced potatoes in a pan with boiling water and let the cubes boil for 10 minutes.
  • Heat the oil in a baking pan.  Add potato, onion, zucchini and garlic and cook over medium heat for about 10 minutes, with occasional stirring.
  • Beat the eggs in a bowl loosely with 1 tbsp cold water. Add parsley and salt and pepper to taste. Pour the egg mixture over the vegetables in the pan and turn the heat low, let the  mixture cook slowly, for about 10 minutes.
  • Serve the tortilla on a plate or bowl and let it cool down for 2-3 minutes and your tortilla is ready to serve!
