Bauke is a salad lover! She is also a lettuce crop coordinator at Rijk Zwaan, a vegetable breeding company who have discovered through a process of natural selection, a new lettuce type that is between a Cos (Romaine) and an Iceberg (Crisphead). It is more oval than an iceberg and rounder than a cos - but the important aspect, according to Bauke is, "it is sweet and crunchy and perfect for making salads." She says "children especially will love this lettuce!" The Crunchy Cos is being introduced to growers around the world so look out for it at your green grocer in the years ahead. If you cannot find the Crunchy Cos just yet don't worry you can easily use an iceberg or cos lettuce for this salad.
