• 125 ml fish sauce
  • 125 ml freshly squeezed lime juice
  • 100 g palm sugar or granulated sugar
  • 2 tbsp vegetable oil
  • 3 red bird's eye chillies, deseeded and thinly sliced into rounds
  • 1 small green cabbage, finely shredded
  • 2 large carrot, cut into matchsticks
  • 1 small red onion, finely sliced
  • 12 basil leaves, freshly torn

This is very easy to make! We love this.

1. Put the fish sauce, lime juice and sugar in a non-metalic bowl and whisk until the sugar is completely dissolved. Add the oil, chillies, cabbage, carrots and onion. Toss well and leave to stand for 30 minutes to 1 hour. 2. Drain and serve scattered with the basil.
