• 400g small potatoes

While this is not a typical German potato salad, I am sure everybody at the table will be surprised and will enjoy this hearty salad!

1. Wash potatoes and cook in boiling salt water for about 20 minutes. Wash rocket, spin-dry and remove hard stems. Wash and dice tomatoes.

2. For the vinaigrette, cut bacon into strips and roast them without oil in a pan. Deglaze with vinegar, season with mustard, salt and pepper. Stir in the olive oil.

3. Drain the potatoes, peel and cut them into slices when still warm, then mix with ruccola (rocket), tomatoes and vinaigrette. Taste for seasoning and sprinkle with parmesan cheese.
