Ingredients

  • 100 gram cooked and cleaned shrimp
  • 1 fennel (thinly sliced)
  • 1 avocado in slices
  • juice of one lemon
  • 2 tbsp of mayonaise
  • 15 gr of dill, chopped
  • optional 15 gr of garden cress for garnish

I love to make salads with fennel. They pair great with shrimp. And shrimps pare great with avocado. In my opinion these ingredients make a brilliant salad together. And the great part, it's ready in a couple of minutes. I like to combine this fennel salad with a nice piece of crusty bread.

Preparation

  1. Start with the dressing. Whisk mayonaise, lemon juice and dill in a big bowl. 
  2. Add the shrimp and whisk again.
  3. Gently add the fennel and avocado and make sure the dressing is mixed throhugh the salad.
  4. Serve the salad on plates and garnish with some garden cress.
