1. Preheat the oven to 190 °C. Wash the eggplant and the carrots. Cut the carrots lengthwise, cut the eggplant into thick strips and peel the garlic clove. Spread the vegetables on the baking sheet, add garlic, olive oil, salt and pepper. Place the baking sheet in the oven for 15 minutes.
2. Meanwhile, peel the orange and cut into pieces. Chop the onions finely and the cilantro.
3. Put some rocket on the plates. Then add the carrots, eggplant, orange, chopped onion and fresh coriander.
4. To prepare the dressing, grate the orange and bring it to taste with soy sauce and add lime juice, olive oil and salt and pepper. Sprinkle the dressing and then mix them together.
