This recipe uses couscous as a tasty and nourishing base ingredient, with the addition of red capsicum (pepper), cucumber, peas and orange slices giving the salad a burst of crunch and colour. Sping onions, fresh mint and pistachios bring bold and unique flavours to the mix, making this salad a little more special.

  • Prepare couscous according to packet instructions
  • Lightly blanch the peas in hot water (for roughly 90 seconds)
  • Chop the peppers and cucumber into small pieces
  • Peel and slice the orange into bite-sized pieces
  • Finely slice the mint and spring onions
  • Combine all ingredients together in a large serving bowl
  • For the dressing, whisk together the olive oil and lemon juice
  • Add a sprinkling of pistachio nuts and pour the dressing over the salad
  • Season with salt and pepper
