  • 1 tbsp of red wine vinegar
  • 1 tbsp of dried oregano
  • 1 clove of garlic
  • 1/2 red chilli (deseeded)
  • 1 tbsp lemon juice
  • salt and pepper

Chimichurri sauce is an Argentinean sauce similar to pesto known as the best accompaniment to barbecued meats, but it pairs great with grilled veggies too! Try it with cauliflower, fennel, cabbage or drizzle it on a tomato salad. Chimichurri is a classic sauce with some basic fresh ingredients that give the sauce a fresh herby flavour with a hint of citrus.

Preparation

You can choose, either chop all the ingredients really fine or the easy way, add the ingredients in a blender and blend shortly until it become a sauce.

Don't overdue the blending, you still want some structure in the sauce.
