  • Slice the zucchini and eggplant into thick slices. Remove the stem and seeds from the bell pepper and cut the flesh into thick strips. In a bowl, mix the vegetables with the olive oil and a generous amount of salt and pepper. Toss well to coat.
  • Heat a grill pan over high heat and grill the vegetables until they are tender and have nice grill marks. Do this in batches if necessary. Set the vegetables aside on a plate.
  • Meanwhile, cut the mozzarella into thick slices.
