Amorphophallus Konnyaku - "Nature's Skinny Sponge"

Amorphophallus:

Konnyaku Konnyaku or Konjac root is a member of the yam family native to Asian countries like Japan and China. Glucomannan, the flour produced from these roots is gluten free and rich in soluble fiber. It is the main ingredient of shirataki noodles, the zero calorie, zero fat, low carb noodles used in many Asian recipes including salads and soups.

Health benefits of shirataki noodles include weight loss, lowering cholesterol, normalizing blood glucose in diabetics, and maintaining digestive health.

Mehmet Oz, M.D. of Dr. Oz and The Oprah Winfrey Show fame, has recommended glucomannan and shirataki noodles as one of the “Best Appetite Suppressants” and aids for weight loss. Dr. Oz called konnyaku “nature’s skinny sponge” because the root is rich in dietary fiber that soaks up hunger. According to Dr. Oz, consuming glucomannan also helps with constipation and diabetes, but does not leave one feeling gassy or bloated.

Shirataki noodles come in various forms, including the original spaghetti-type, fettuccine-type and angel hair-type. Recently shirataki rice was introduced under the brand name Skinny Shirataki Rice. The bland noodles absorb the flavors of spices and seasonings, and add fiber and bulk to many salad recipes. (See Shirataki Summer Salad, Asian Infused Noodle Salad).
