Frank likes all types of salads, but he acknowledges that his main choice is spinach. What he likes about it is that they can be eaten raw, or cooked giving you more options. Angela prefers rocket salad. She finds that it has a very unique flavour which is a bit peppery and very different to other salad vegetables.
Salad preparation tips
When Angela prepares her rocket salad, she uses a vinaigrette dressing made with balsamic vinegar, olive oil, and a little bit of salt. She just coats the leaves with the dressing and then adds a handful of parmesan cheese and some sliced Beurre Bosc pears over the top. Angela recommends this salad as a great accompaniment to any type meat, but she thinks this salad is perfect for pork or chicken.
A spinach salad is also very easy to make. Angela and Frank love spinach with just a little bit of olive oil, some cracked black pepper, diced tomatoes, and red onion mixed together. "Salads must be light, and they should not be drowning in dressing. Just enough to enhance the flavour"says Angela.
What to look for when selecting a salad mix
The new types of lettuce leaves available are much narrower than in the past and the colours, texture, and flavours available are more exciting. Look for vibrant colours. Leaves should look fresh, crisp and free of browning or rots. Angela says that it’s got to be fresh, like it just has been picked.
