Lamb's lettuce (corn salad) with beetroot and potatoes is a recipe that tastes good, especially in the colder half of the year. The beets, potatoes and eggs are cooked. This hearty salad is also good as a main dish, because the potatoes and beets contribute some carbohydrates.

Preparazione

Wash and clean corn salad and spin dry. Cut red beets and potatoes into small pieces. Chop the onion and cut the eggs into quarters. Mix all the ingredients on a plate and sprinkle over the sunflower seeds.

Make a dressing of olive oil and balsamic vinegar. Season the dressing with salt and pepper to taste. Drizzle the dressing over the salad.
