A wonderful fresh and tasty salad which combines the flavours of many typical garden vegetables with orange, mint and coriander. Serve as a meal, a starter or share with your favourite Indian curry.
Preparation
1 Cut all the vegetables into a diamond shape 2 Add them into a bowl and mix with olive oil 3 Cut the mozzarella cheese into a diamond shape and mix with vegetables 4 Add salt, black pepper, sugar, the olives and a slice of orange, then mix well together 5 Garnish with some chopped coriander leaves and mint. 6 Serve cold.
