Cherry tomato and melon cocktails

Introduction

This is a great recipe to prepare for your next party. The sweet and sour combination is hard to resist.

Ingredients

1 melon - like the golden honeydew melon
1 bunch of fresh mint
500g cherry tomatoes
10 tablespoons of extra virgin olive oil
coarse sea salt

Preparation

Simply, cut the golden honeydew melon into cubes 1.5 to 2 cm thick. Then, cut the cherry tomatoes lengthwise in half. Transfer the cherry tomatoes and the melon cubes to a large bowl, pour in the olive oil and sprinkle sea salt over the fruits. Mix gently. Take a cube of Gold Honeydew Melon, put a mint leaf on top and place half a cherry tomato on the mint leaf and then fasten together with a cocktail stick. Serve on a nice plate and enjoy!!
