Ingredients

  • A small bunch of radish (about 12) finely diced into small cubes
  • 1 green (capsicum) pepper diced
  • 1 red (capsicum) pepper diced
  • 1 small chilli (deseeded and thinly sliced)
  • 1 handful of crushed walnuts
  • 2-3 shallots thinly sliced on the diagonal
  • Half a red onion finely sliced
  • 1 telegraph cucumber cut into slices

Dressing ingredients

  • 6 tablespoons of olive oil
  • a splash of balsamic vinegar
  • a small handful of ground pine nuts (lightly roasted)
  • Salt and pepper to taste

About a million years ago, when I was in primary school, my teacher helped us start a special garden project.

I decided to grow radish and it was going splendidly until one terrible day; the kids decided to play “Simon says” and one of them suggested “raid Jim's radish patch”. My beautiful plants were destroyed and I was devastated at the loss.

I reckon I've gotten over it, but my family aren't so sure - ever since that day I have grown fresh radish every year in my home garden.

To use up the large amounts of radish I grow, I have developed this simple salad. It has a crisp, clean taste with a nice sharp bite from the radish which I believe cleanses the pallet and warms the soul. Toss through some of my family's special “secret dressing” and this dish is truly divine. Enjoy!

Preparation

Wash and chop salad ingredients and combine in large bowl. Mix dressing and toss through salad. 

Serve on a large plate (or bowl) to share.
