I love fresh produce and in particular eggplant. Being able to watch it grow on the farm and to supply it fresh onto our customers plates is very rewarding.
I LOVE eggplant! exclaims Jim Laftsis.
Jim and Flora Laftsis started farming tomatoes on the Adelaide outskirts, Australia, during 1982. Today, Jim and Flora specialise in growing capsicums and eggplants with their son Con and his wife Olivia.
Con recalls how he developed a love of the farm. ‘During my youth, I had a strong passion for farming. Mum didn’t want me to choose farming as my career but the farm is a natural progression for me as I always worked on it, before and after school – every chance I had,' said Con.
'During schooling, my Mum couldn’t get me to complete my homework and I would do anything to get outside on the farm. I like to see the plants grow to full harvest and I also enjoy marketing the produce. These new eggplant varieties are beautiful. We market them under ‘Black Magic’. Hard work hasn’t killed anyone. It’s in my blood. These days, I have to do my homework in researching industry developments to stay ahead’, said Con.
