The arrival of summer is the ideal time for a fresh and sunny salad! The lemon, chilli and mint gives this salad a slightly sour taste with just a little bite. Ideal starter for a dinner at sunset! If you want to create this salad for more people, count 1 zucchini per person. The zucchini can also be grilled on the barbecue.

Preparation

Cut the zucchini lengthwise into slices. Grill them in a very hot grill pan until the zucchini slices have char grilled stripes on both sides.

Lay the slices on a plate, but not directly on top of each other to prevent them sticking together and going soft.

Remove the seeds from the chilli (hot red pepper) and chop finely.

Cut a small clove of garlic finely into small pieces.

Sprinkle the zucchini with the chopped chilli and garlic, add a little salt and freshly ground black pepper.

Serve with fresh mint leaves and a generous drizzle of good olive oil, then finish with a squeeze of lemon over the salad and it's ready!
