After seeing so many examples of vegetable noodles on Pinterest I had the desire to learn how to prepare and combine the noodles myself. So I went to the store, bought myself a julienne peeler and searched on Pinterest for inspiration to compose my own recipe.
The result: A zucchini noodle salad with homemade pesto, grilled tomatoes, sprinkled with fresh grated Parmesan cheese and roasted pine nuts. Best served with some warm crusty bread!
Preheat the oven to 200 degrees. Shave the Parmesan cheese. Toast the pine nuts and keep it aside until serving. Start preparing the pesto.
Combine the basil, garlic, cheese and almonds in a food processor and pulse until chopped. Add both olive oils and lemon zest and process until fully incorporated and smooth. Season with salt and pepper. If you want it to be more peppery? Add more garlic or Parmesan cheese.
Put the tomatoes in a baking dish an drizzle with a little olive oil and a pinch of sea salt. Put the dish for 15 to 20 minutes in the preheated oven.
Use the julienne peeler to make noodles out of the courgette. I was curious about the taste and structure and if it needed to be boiled before consumption. But they're perfect raw, in fact it's a fresh and juicy taste. When you're done, leave the noodles in a drainer until serving.
Way of serving:
Divide the rocket on plates. Mix the pesto through the noodles en divide the noodles on top of the rocket. Bring your noodle salad to taste with the grilled tomatoes, Parmesan cheese and roasted pine nuts.
