  • 1 medium green zucchini

Dressing ingredients

  • 2 basil leaves, plus two sprigs for the garnish
  • 1 teaspoon of extra virgin olive oil
  • Pinch of salt to taste
  • Pinch of ground white pepper to taste

An original salad that uses thin "liguine" strips of zucchini (instead of pasta) to surprise someone you love!

Preparation

  • Peel and finely slice the zucchini with a potato peeler, then cut the slices into thin "linguine" strips 5mm wide with a knife.
  • Cut the tomatoes into thick slices and then into cubes.
  • Finely chop the basil.
  • In a bowl gently combine all ingredients with the zucchini linguine and toss with the olive oil, salt and pepper.
  • Serve forming a 'nest' with a fork and garnish with sprigs of basil.
