These zucchini and carrot roll-ups are attractive on the buffet table and very tasty as well.
Wash and salt zucchini and cut lengthwise into strips, then pat dry with kitchen paper and bake or roast in a pan. Cut zucchini remains, onion, spring onion and garlic and sauté in a pan. Season the paste with salt, pepper, paprika, soy sauce, tomato paste, parsley and oregano. Cut carrots into strips and blanch. Spread the paste on the zucchini strips. Roll up with carrot strips placed in the middle and put on a plate. Roast pine nuts and sprinkle over the roll-ups. Enjoy!
