  • 10 /12 Cherry tomatoes
  • Some pinenuts
  • Fresh white bread crumbs

Dressing ingredients

  • Balsamic vinegar
  • A cup of good olive oil
  • ½ teaspoon Salt

I love this salad because some years ago I was having some holidays in France and in I noticed on the menu of the restaurant, the following dish: “Salade de chevre chaud.” After having discovered the meaning of the plate, I ordered it and it was absolutely delicious…..!!! From that moment I discovered that salads do not always have to be cold - they can also be warm…..

Preparation

Combine the mixed lettuce leaves and the cherry tomatoes in a bowl. Cut the goat cheese into rounds and gently roll each round into the bread crumbs. Heat in the microwave until the cheese is warm and starting to melt on the outside but still firm inside. Place the warm crumbed goat cheese over the salad. Garnish with a handful of some lightly roasted pinenuts. In a small bowl, whisk together the balsamic vinegar, the olive oil and the salt to make the dressing. Drizzle over the greens just before serving.
