  • 1 spoonful of finely chopped onion

  • Extra virgin olive oil flavoured with rosemary
  • Salt

I have prepared a tartar of tomato with thinly sliced ham. When I prepare it in summer for my friends I always get positive feedback and they are surprised at how easy it is to make.

Preparation

Wash the tomato, peel the skin and then cut into very small pieces. Place in a sieve and gently press to remove some of the juice. 

Chop the garlic and the onion very well.

Mix the tomato with the rosemary flavoured olive oil and a pinch of salt. Place the mixture into a cylindrical mould, press gently then remove the mould.

Top with the garlic and onion and serve with the thinly sliced Spanish ham.

Tips from the author

The tomato to my opinion is the king of the kitchen garden and not just because at El Huerto de Tía Lou we grow almost 200 varieties of tasty tomatoes. I think that all homes in Spain enjoy tomatoes during at least summer season and are an integral part of Spanish cusine.
