Ingredients

  • 6 fresh white asparagus spears
  • 1 salatrio lettuce (three colours) cut and washed
  • 120g baby mozzarella
  • 200g cherry tomatoes (halved)
  • 1 handful of roasted pistachio's
  • 1 handful croutons

Dressing ingredients

  • Mustard dill dressing

Easy salad for hot, sunny days. Mozzarella, cherry tomatoes, asparagus, three kinds of salanova lettuce, some pistachios, croutons and a mustard-dill dressing. Perfect to share and enjoy especialy during the asparagus season (June & July in Holland!)

Preparation

Steam the asparagus spears for about 5 minutes then cut into 2cm pieces.
Lightly roast the pistachio nuts.
Toss everything together in a bowl and serve with the dressing.
