Ingredients

  • spinach (120g baby spinach)
  • cherry tomatoes (1 x 250g punnet)
  • 1 red sweet pepper (capsicum)
  • 1 chili
  • goat cheese (to crumble)
  • 250g shrimps (prawns) peeled / shelled
  • olive oil
  • garlic
  • white wine
  • salt & pepper
  • tablespoon coconut (shredded)

This salad has a mix of ingredients that give you a powerful and delicious flavour.

Preparation

Start peeling and cutting the garlic in very small pieces. Then finely cut the red peppers and chili.

Put some oil in a frying pan and when hot add the garlic. When this is just beginning to turn brown add the peppers and the chili and saute it over medium heat for 10 minutes. Then add the shrimps, a little white wine, salt and pepper, and saute the mixture until the wine evaporates and the shrimps are cooked, about 10 minutes.

Cut cherry tomatoes in half.

Put in a salad bowl the spinach leaves, add the cherry tomatoes and add extra virgin olive oil and salt. Then add the pieces of goat cheese and nuts.
Place the shrimp mixture on top and finish with a sprinkle of shredded coconut.

Serve and enjoy!
