• 150g wild rocket
  • 2 heads of red chicory (now Verona or Castelfranco chicory)
  • 1 yellow sweet pepper
  • 150g of plum tomato
  • 2 spoons of skinned almonds

Dressing ingredients

  • White wine vinegar or aromatic vinegar
  • Extra virgin olive oil
  • Salt and pepper

This recipe was born from an idea of a dear friend of mine some years ago, during dinner. Today, when we meet together for dinner, we prepare this salad in honour of the friendship that links us from our time together at school.


Wash all the vegetables, cut the rocket into small pieces, cut the chicory and the sweet pepper in thin stripes (it is important to remove all the seeds from the sweet pepper). Cut the tomatoes in slices. Put all these ingredients into a bowl. Grind the almonds and put them into the bowl. Mix the vinegar with oil, salt and pepper and dress the big salad with this mixture.

Tips from the author

If you want to have a stronger taste or to improve this good salad, you can add some small cubes of fried bacon and of toasted bread.
