Not only are colourful rice paper rolls fantastic for an on-the-go snack or a pre-packed lunch, but they're so easy to make and good for you. In this easy recipe, we've packed our rolls with healthy vegetables like carrot and cabbage and we have a secret ingredient - piel de sapo melon - which adds an incredible sweetness and depth of flavour to the treats.

Preparation

  • Slice the red cabbage, carrot and piel de sapo melon into thin strips. You could also grate the carrot. 
  • One at a time, place a rice paper wrapper in hot water until it softens. Lay on a flat surfact and put the cabbage, carrot, melon, fresh herbs and sesame seeds in a pile in the centre of the wrapper. Bring in the two side edges of the wrapper and then roll. 
  • Prepare the sauce by mixing all of the dressing ingredients together. Serve the rice paper rolls with the dip.
