I never really considered using the radish leaves. They smile at you on the shop shelf with their pink round face but you (or at least me) don't know how to prepare it. What is more, they have a particular taste..not everyone's cup of tea! One day, inspired from a nice salad recipe with radish, I decided to make the step and buy them but as soon as I arrived home I thought: what to do with the leaves? Can I really throw away so much? Google helped me with a recipe, which I reinterpreted and would like to share with you because to my big surprise: radish leaves are really, really, really tasty! PS: and you can make small mouses out of the radish ;)

Preparation

Chop the potato Chop the onion Wash the radish leaves Put everything into a pot with 3 litres water and let it boil for about 45 minutes, adding salt, pepper, some chilli and extra water if necessary. When ready put the soup in a mixer and mix it till you will get a nice cream. (I don't have a mixer and also without it the soup tastes great!) Serve it with grated parmigiano and garnish with some radish slices and / or with some radish mouses! Buon appetito!!
