A tasty potato and seafood salad that you can prepare and eat when you come from work, after a walk, or a visit to the gym. Remember, to eat well you do not need to spend hours and hours in the kitchen. So please enjoy your time making this recipe because I'm sure you're going to love it!!
Defrost the prawns if they are frozen.
Rinse and strain the boiled potatoes
Wash the lettuce, spin dry them and cut into thin strips
Cut the potatoes in slices
Peel and chop the garlic. Chop the parsley
On your serving plate place the lettuce, the potatoes, the prawns and the anchovies.
In a bowl for the dressing: add the oil, garlic, parsley, salt, pepper and the grated lemon rind. Mix well.
Apply the dressing just before serving and decorate with the chopped chives
Tips from the author
When grating the lemon rind, only grate the yellow peel. Take care not to reach the white peel, since it can make the dressing bitter!
You can also use fresh anchovies in vinegar for this salad.
