  • Mesclun of selected leaves (I like green and red lettuce leaves)
  • Yellow sweet pepper - (capsicum) cut into strips
  • Cherry tomato
  • Sliced mushrooms
  • Blue cheese (cubed) / parmesan (sheet) / cheese (in sheets or cubes)
  • Pomegranate
  • Mixed nuts: walnuts, cashews, pine nuts, peeled pipes ...

Dressing ingredients

  • Extra virgin olive oil
  • Fruity balsamic vinegar (mango, orange or similar)
  • Salt

I love this salad because I make it with the ingredients that I like and that I have normally at home. I do it "ad lib" when I want something fresh and tasty and when I have a surprise visit. If I'm missing any ingredients I can easily replace it with another.

Preparation

Put in a bowl the selected leaves. Add (in this order) the sweet pepper, tomato, mushrooms, cheese, pomegranate and nuts. Salt and add oil and vinegar.
