  • 1 red butterhead lettuce
  • 1 red pepper
  • 250g small cocktail tomatoes
  • 2 teaspoons lemon juice
  • 3 teaspoons virgin olive oil
  • 1 teaspoon finely chopped rosemary
  • 1 teaspoon grated lemon peel
  • 1 clove of garlic, crushed
  • 100 g parmesan cheese (or other strong cheese)
  • salt and pepper

Imagine the Amalfi coast on a warm summers evening, relaxing on the verandah of your villa and settling down to a relaxed dinner. With its fresh and crispy texture and delicious mediterranean flavours, this salad is sure to delight and inspire.

Preparation

Cut and wash the red butterhead lettuce. Place it in a salad bowl.

Cut the pepper into small pieces and the tomatoes in half. Add to the bowl.

In another bowl mix the olive oil, lemon juice, rosemary, grated lemon peel and crushed garlic to make a dressing.

Add salt and pepper to taste.

Scatter the cheese over the salad.
