A delicious winter meal which is tasty, creative and special.

Place the cabbage into a large bowl and sprinkle with a pinch of salt. Coat the cabbage in the salt with your hands. By covering the cabbage, the cells will break and the moisture from the cabbage will combine with the salt making it taste even better. If you listen closely you will hear the cabbage cracking as it reacts with the salt!!

Add a small amount of sugar, black pepper, vinegar and olive oil. Let it marinate for 10 minutes then stir the raisins through the cabbage and dress it on the lettuce. Sprinkle the nuts on top and serve immediately. To enhance the spice why not add extra pepper into the salad or for those with a sweeter tooth throw in some extra sugar.

Be flexible with some of the quantites and create your own taste.
