Ingredients

  • "The Jarradilla" fresh cheese (if not available, try feta)
  • 1/2 pomegranate
  • 80 grams corn salad
  • Nuts (try pecans or walnuts)

Dressing ingredients

  • Freshly ground black pepper
  • Salt
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons chive oil (or extra virgin olive oil)

As the first frosts of autumn begin to appear in Spain, we start to see lamb's lettuce (also known as corn salad) available in the markets and being served from the kitchens.  I want to share this simple salad, quick to prepare and unique, combined with fresh cheese, nuts and pomegranate. I hope you will enjoy this  sweet and savoury delight.

Preparation

First, gently roll the pomegranate half to loosen the pomegranate seeds. Place the lambs lettuce on a plate and arrange the fresh cheese cut into pieces on top, then sprinkle the nuts and the pomegranate seeds over the salad.

Finish off with apple cider vinegar, chive oil, salt and pepper. Then, carry it to the table and combine well before tasting. Simple and delicious.
