Ingredients

  • 1 big or 2 small kohlrabi
  • 30 g hard goat's cheese
  • 2 tbsp of crushed hazelnuts
  • 2 sprigs of mint, leaves in thin stripes
  • 1 orange

Dressing ingredients

  • a squeeze of lemon juice
  • 2 tbsp walnut oil (or olive oil)
  • salt and pepper
  • fennel seeds

Make a big impression with little effort: kohlrabi carpaccio!

Preparation

Peel the kohlrabi.
Cut the kohlrabi with a vegetable peeler into very thin slices. Cut the orange in thin slices with a sharp knife.
Divide the slices nicely on a big plate.
Make a dressing of walnut oil (or olive oil) and lemon juice, crushed fennel seeds and taste it with salt and pepper.
Sprinkle on the mint, hazelnuts and drizzle on a little dressing. Enjoy.
