The second "Love my Salad" event was organized by my company late April, a workshop for all salad lovers. In a relaxed atmosphere you get the opportunity to get to know your colleagues better and you're working with beautiful fresh salad products. The challenge was to use fixed ingredients; tomatoes, various types of lettuce like the new Salanova baby butter leaves and Ricura (Spanish) melon called Mellissimo and make the most spectacular salad. People worked in pairs because there were many applicants. Together with my colleague Dwi I have made a delicious salad with the best of both worlds - combining chicken, sweet pepper, lettuce tomato with orange and a simple dressing. It was lots of fun....
Cut the red and white onion in rings, and the smoked chicken and tomatoes into chunks. Put some olive oil in a saucepan and cook the onions, add the tomato and chicken and season to taste with cayenne pepper, sea salt, black pepper and sugar. Cut the sweet peppers into small pieces and cut rings of the black olives. Serve on a bed of the beautiful butter lettuce leaves. Pore the fried onion, tomato and chicken over the sweet peppers. Garnish with the mix of olive oil and mayonnaise dressing.
