Do you have leftover vegetables after making a salad or other dish? Don't waste them, turn them into delicious vegetable chips!

Preparation

Preheat the oven to 180 degrees.
Cut the vegetables with a mandolin, cheese slicer or peeler into very thin slices. The thinner the better.
Line a baking tray with parchment paper and place the slices on the sheet. Brush them with a little olive oil.
Put the baking tray in the oven for about 10-15 minutes, but an eye on them so they don't burn. 
When the chips are crunchy, they are done! Season them with salt and if you want a bit more flavor, sprinkle smoked paprika or chilli powder on top.
