Ingredients

  • 6 herring fillets, sliced
  • 6 boiled potatoes, peeled and cut into slices
  • 2 red onions, chopped

Dressing ingredients

  • 4 tablespoons mayonnaise
  • 4 tablespoons sour cream or crème fraîche
  • 4 tablespoons seeded mustard
  • 1 tablespoon honey
  • Juice of ½ lemon
  • Red onion, cucumber slices and dill for garnish

The wind whistles past my ears as I scramble to stop the car door blowing off its hinges. It’s October in Iceland and the first “real” wintry days have hit the island, as the last of the sheep are mustered from the highlands before the snow sets in.

This potato salad, served with herring, is a favourite among the locals and one which I really enjoyed during my visit.

Preparation

  1. Stir together the mayonnaise, sour cream and mustard.
  2. Add the honey and lemon juice.
  3. Combine potato slices, herring and red onion.
  4. Pour over the dressing and add garnish.
