A Middle Eastern inspired salad with a mix of green beans and cheese for lunch in the office or an evening full of energy. If you are looking for a tasty protein bomb, here it is!

Preparation

Put the lettuce leaves in a bowl and mix them with some olive oil, vinegar, salt and pepper.

Blanche the peas, beans and green beans (you can use fresh or frozen products). Add them to the salad.

Break goat cheese in pieces over the top and finish with chopped mint and some good extra virgin olive oil.

Finally, sprinkle generously with za'atar and sumac.
