Ingredients

  • 100 gr mixed lettuce leaves
  • 150 gr peas
  • 150 gr broad beans
  • 6 green asparagus
  • 100 gr Goat's cheese
  • 3 sprigs of mint
  • 1 tsp Sumac

Dressing ingredients

  • 3 tbsp olive oil
  • 2 tsp vinegar
  • salt and pepper
  • 1 tsp Za'atar

A perfect green salad for the whole family. This salad is loaded with hap-pea green vegetables like peas, broad beans, asparagus and mixed greens and creamy Goat's cheese. Let's get cooking!

Preparation

  • Put the lettuce leaves in a bowl and mix them with olive oil, vinegar, salt and pepper.
  • Blanche the peas, asparagus (optional) and green beans in boiling water for 5 minutes. The green asparagus can be consumed raw when cut in ribbons. Trim the bottom ends off the asparagus and, using a vegetable peeler slice the stalks lengthwise into thin ribbons.
  • Mix the vegetables with the lettuce. Crumble goat's cheese on  top and finish with chopped mint and drizzle with quality extra virgin olive oil.
  • Finally, sprinkle generously with sumac, these are spices from the Middle East, with a tangy lemony flavour and za'atar, a herb-mix consisting of oregano, thyme and sesame seeds.
