A perfect green salad for the whole family. This salad is loaded with hap-pea green vegetables like peas, broad beans, asparagus and mixed greens and creamy Goat's cheese. Let's get cooking!
- Put the lettuce leaves in a bowl and mix them with olive oil, vinegar, salt and pepper.
- Blanche the peas, asparagus (optional) and green beans in boiling water for 5 minutes. The green asparagus can be consumed raw when cut in ribbons. Trim the bottom ends off the asparagus and, using a vegetable peeler slice the stalks lengthwise into thin ribbons.
- Mix the vegetables with the lettuce. Crumble goat's cheese on top and finish with chopped mint and drizzle with quality extra virgin olive oil.
- Finally, sprinkle generously with sumac, these are spices from the Middle East, with a tangy lemony flavour and za'atar, a herb-mix consisting of oregano, thyme and sesame seeds.
