Ingredients

  • 2 baby cos (gem) lettuce
  • 125g goats cheese
  • 4 boiled eggs (halved)
  • 250g packet of cocktail truss or plum sized tomatoes

Dressing ingredients

  • 1 small clove of garlic crushed
  • half a teaspoon English mustard
  • 2 tablespoons mayonnaise

Our kids love cos lettuce and this combination with crumbled goat cheese and tasty tomates has beome one of our favourites. It's simple & can be served on individual plates as a starter or shared on a big flat plate.

Preparation

Wash and pat dry the baby cos leaves and place a some leaves on each plate. Top with the quartered tasty tomatoes and the boiled eggs. Simply crumble the goats cheese over the top and serve with a good dollop of home made salad cream. (just stir the crushed garlic, mayonnaise and mustard together.)

Tips from the author

Variations include adding cucumber (sliced) or freshly grated radish.
