Once every 3 months, if the weather is good, my wife and I go to Rome to take part to an important meeting for dog lovers. It is a good opportunity to make our dear friends run together, while we talk about our dogs, sitting around a table, eating the dishes we have prepared. For these meetings each of us prepares some foods, that we share at a big buffet. My wife and I usually prepare this “succesfull” salad.

Cook the rice keeping it “al dente”. Grate the zucchini with a big holes grater. Cut the tomatoes into small slices. Wash and dry the capers, grind them finely with basil and parsley. Mix all together and dress with extra virgin olive oil.
