Ingredients

  • Choose a “wrapper” kind of lettuce with a large leaf (e.g. Cos or romaine, iceberg). This lettuce leaf will make the wrapper. Then select other kinds of lettuce leaves, different in leaf and colour.
  • Next choose your other ‘filler’ ingredients with good taste and colour. For example, a red pointed capsicum (pepper) and a zucchini flower.
  • In terms of seasoning, you should opt for fresh herbs or cresses.
  • The dressing will make the finishing touch. You can use a cumin dressing, a balsamic syrup, a dressing of cherry tomatoes or a simple olive oil based dressing..

Have fun making these easy lettuce wraps. Experiment with different types of lettuce and vary to your own taste and liking.


Preparation

For each wrap, place a large lettuce leaf (as wrapper) on the working space.
Next, arrange the various kinds of lettuce on top. Stay within the edges of the larger lettuce leaf and leaf some space at the bottom, Then add your ‘filling’
* I stuff one wrap with Frisée, red pointed pepper thinly sliced different kinds of pea sprouts.
* The other wrap, I stuff with Salanova lettuce leaves, zucchini flower, corn salad leaves, long pea sprouts and shiso purple cress.

Carefully roll up the salad wraps sideways and fold the bottom part over the wrap. Tie it up with a string. Finally spray on some dressing of your choice. Serve immediately.
(or make ahead of time and store in the fridge, without the dressing, for up to 12 hours.)
