  • 1 yellow capsicum (bell pepper)

  • 2 cloves of garlic

La Ensalada de Nopales is a salad with Mexican cactus and one of the most popular salads in Mexico! It is difficult to find the cactus outside from Mexico but it is worth to try because it's one of the best salads I have ever tried!

Preparation

Cut all ingredients and put them in a large terracotta pan or in a normal pan. Season with olive oil, salt and pepper. Cover the pan and let everything cook for about 20 minutes on a low heat. When the cactus got a soft consistence turn off the heat and let everything cool down. The best way to serve this salad is with warm tortillas and chilli sauce. Buen provecho!
