Ingredients

  • 100g white or green cabbage - shredded
  • 1 apple - chopped
  • 50g red cabbage - shredded
  • 50g carrot, jullienne or shredded
  • 2 cups pecans
  • salt and pepper
  • 30g parsley - chopped
  • 1 tbs of lemon juice

Dressing ingredients

  • 3 tbs yoghurt
  • 1 tbs honey
  • 1 tsp mustard

This salad makes the perfect packed lunch for school or work.  Shredded cabbage, holds up well after being tossed with dressing and it even tastes better as it marinates!

Preparation

  • In a large bowl toss together the chopped cabbage, apple, parsley and combine with lemon juice, salt and pepper to taste
  • In a small bowl whisk together the dressing of mustard, yoghurt, and honey
  • Mix together and place in a lunch box or salad container with a tight lid
  • Keep the pecans separate and Just before serving, add them to the salad to keep them crunchy
